Today was the first day in the last month or so where I have had a chance to sit down, do some admin work and breathe. It’s been almost a month since I last posted on the blog and it’s been a whirlwind couple of weeks!
So what have I been up to? Designing cakes, teaching classes, preparing my online tutorials and going back to school.
Yes, I’ve decided to go back to school… pastry school that is. My good cakey friend Lilia and I have been thinking about this for awhile and recently we finally got around to making it happen. We’re supposed to specialise in patisserie but the first semester of classes focus on proper kitchen etiquette, food handling and basic cooking skills. What does this all mean? Well, our days consist of prepping food, deep frying, precision cuts, boiling and cutting up chicken and filleting fish. Not really what you’d expect from a patisserie class but it’s fun none the less. Occasionally during our practical sessions, Lilia and I would look at each other and just burst out laughing… we would never have imagined ourselves, being cake decorators, having to pull skin off a fish or measure our carrots to ensure we have cut them right. No joke, I actually used a ruler to check my precision cuts were accurate!

Together with attending classes I’ve also been teaching back to back classes… business sessions, round cakes, 2 tier cakes, square cakes and cupcakes. It’s been so lovely to meet so many new and returning students, and just look at some of their amazing work…
And at at every spare moment of sunlight, I try and squeeze in the photography of my online tutorials. I’ve got lots of ideas sketched up and here are some of them, ready to go. Feel free to recommend topics you’d like to see 🙂
